Angel BF27 is a classic Weihenstephan bottom-fermented lager yeast. At cool temperatures it exhibits a short lag phase with strong, steady kinetics. It is a well-rounded lager yeast with modest production of floral and fruity esters and a very clean, crisp, and dry profile.
Fermentation Range:
50–77 °F (10–25 °C)
Optimal for clean, refined flavor: 50–68 °F (10–20 °C)
Usage Rate:
0.8–1.5 g/L depending on wort strength and fermentation temp
Typical pitch: 80–150 g/hL; increase to 300 g/hL for high-gravity or stressed fermentations
Rehydration Instructions:
Rehydrate in clean water or diluted wort at 72–86 °F (22–30 °C) for 10–20 minutes before pitching. Adjust to fermentation temp and pitch within 30 minutes to maximize viability .
